Maybe an invert gravity platform course floating above a massive sprawling metrolpolis, the racers race upside down relative to the city below/above them? One (or more) of the newer Wipeout games used this technique to keep 60fps on the console. It seems it would be an engine-level process, not sure if Unreal 4 supports it, though.

Seconding the level and lighting improvements, bloody marvelous. Also seconding the mine spam, it can get a bit crazy.
